Do you love curry spinach with cheese cubes at Indian restaurants (palak paneer) but wonder just a little about the amount of butter and cheese involved, given its obvious deliciousness? Me too. Or maybe you avoid animal products. Either way, isn’t it great that Mark Bittman has our backs? Here’s a healthy version of palak “paneer” using tofu, with only a little oil. simple crispy baked tofu
This might be my new favorite way to make tofu now. Because crispy! *happy food dance* But also healthy because these little dudes are baked, not fried. It’s one of my things, baked instead of fried. You can put these on EVERYTHING! The photo above is of the crispy tofu in my vegan palak paneer. Thanks to David Lebovitz and Joe Yonan for sharing this amazingness with the world! Continue reading
butternut squash and white bean gratin

My husband mowed ALL of these (I had a dainty few). OK maybe 2/3 him, 1/3 me. LOL. My point is, they’re really good. I feel like this could be the next cauliflower. (Veggie that gets all kinds of star treatment due to being a carb stand-in!) Continue reading
roasted eggplants with thyme, garlic yogurt sauce, and pomegranate arils

Have you heard of Thug Kitchen? Warning: There’s a lot of cussing! I think it’s funny but hey, my Mom reads this so I’ll be keeping it clean. But if you don’t mind the swearing, their thing is to help regular people eat healthy – keepin’ it real – and their recipes are really great, so check out their cookbook. This vegetarian chili turned out so well, I will definitely be trying more in the future! Continue reading
