Behold, the humble red radish, my namesake. Broiled, the bite goes away and they almost resemble baby red potatoes – I’m not kidding – but with a tiny kick remaining… and NO CARBS, BABY. My husband mowed ALL of these (I had a dainty few). OK maybe 2/3 him, 1/3 me. LOL. My point is, they’re really good. I feel like this could be the next cauliflower. Creamy pumpkin topped by crunchy parmesan-herb topping….parmesan, sage, rosemary and thyme… yes please! Sometimes we think of pumpkin as being a sweet thing (which it is) but it’s so nice to mix it up and try a savory preparation. Bonus: your home will smell heavenly as these are roasting. Thanks to the geniuses at Ottolenghi – every one of their recipes I’ve tried has been outstanding (check out this post for chilled soba noodles with mango, eggplant, and basil, as well as the cookbook, for more Ottolenghi goodness!). Fluffy, buttery, cheesy goodness with no carbs?! What?! I had heard rumors about this magical rainbow unicorn situation and finally decided to try it for myself. I am thoroughly delighted with the results, and you will be too. It is 15 minutes to easy cheesy goodness! Yes, there is some butter, but let’s face it, if you had made mashed potatoes you would be eating at least this much butter and probably more (and it makes a LOT so you will not be eating the whole thing yourself in one sitting… we tried.. it doesn’t seem possible). Does it taste like cauliflower? Yes, a little bit, but not overwhelmingly. You will almost believe it’s mashed potatoes, really! I may bust this out at Thanksgiving. Hmmm *tenting fingers*.
